Get to know: Pierre Antonin, Pet-Nat Vigne Sauvage 2024, Languedoc, France

A joyfully wild pét-nat with delicate sparkle and natural soul.

Tasting Note

Crafted in the ancestral method from organically grown grapes in the foothills of the Pyrenees, this unfiltered, undisgorged rosé bubbles with freshness, floral notes and raw energy. A vivid expression of the South of France, made with the lightest possible touch on the land. Pale pink and gently cloudy in the glass, this pét-nat offers aromas of wildflowers, soft red fruits and a hint of citrus peel. The palate is clean, lively and dry, with fine bubbles and subtle texture from the lees. Pure, zippy and incredibly moreish.

Top food pairings:

  • Goat’s cheese crostini with honey and thyme
  • Vietnamese rice paper rolls with lime and mint
  • Grilled peaches with prosciutto (or a vegan version with smoked tofu)
Kate Says

"There’s a beautiful tension in this pét-nat - it’s delicate and graceful, but also full of untamed charm. Wild-fermented, low-intervention and totally refreshing, it’s pétillant naturel at its most authentic."

Producer Info

Pierre & Antonin is the brainchild of two friends from winemaking families who met in a New York wine bar and decided to reimagine the future of Languedoc wine. With vineyards near Carcassonne and a deep commitment to biodiversity and resistant grape varieties, they are pushing boundaries in sustainable, low-intervention winemaking — with joy and integrity in every bottle.

How it’s made:

  • Organically grown resistant grape varieties planted in 2022 on the Domaine de Stricou estate
  • Single (ancestral) fermentation using wild yeasts only
  • Fermentation started in stainless steel, paused via cooling, then resumed in bottle
  • No sulphites added, no dosage, no disgorgement — lees left in suspension
  • Eco-conscious packaging using lightweight bottles, local cork, no aluminium

Good to know:

  • Region: Languedoc, France
  • Style: Natural sparkling rosé (pét-nat)
  • ABV: 11.5%
  • Colour: Pale pink with a natural haze
  • Dosage: None
  • Sulphites: Very low
  • Serve at: 6–8°C, chilled but not icy
  • Vegan: Yes
  • Organic: Yes (Agriculture Biologique)

Why we love it:

It’s vibrant, feather-light and full of life - made by two visionaries who are changing the face of Southern French wine, one bottle at a time.
